Kyle’s Notes:

We wouldn’t be able to produce as high quality of bourbon as we are if we didn’t have an amazing team in the distillery. Across the board from bottling, to quality control, shipping, accounting – everyone plays their part in making sure the bourbon makes it from our rickhouse to a consumer. However, I’m particularly indebted to our crew that does all the actual work in the distillery and rickhouses. This work is in extreme hot and cold and is often very physically demanding.  

Oftentimes when I put together a batch, I have a lot of variety to choose from in the rickhouse, and I will really obsess over making sure there is a diversity of floors, rick locations, and taste profiles to create a unique batch. A unique batch often means more work for our distillery crew because they will have to pull just a few barrels from each and those are sometimes located in the middle of the rick. Even though they won’t say it to me, I know they hate me when they see some of the lists of barrels to pull. This month, however, I saw the relief in their faces when I gave them the list of barrels. This distilling season did not provide much selection in the rickhouse – all of the barrels were heavily concentrated on just a few locations. 

All that being said, I’m very pleased with how this single floor batch tastes and am personally a huge fan of the 3rd floor for our Ben Holladay 1856 Original Mashbill. Most of my favorite one barrels have come from the 3rd floor (here’s looking at you “Shorty”). I think this batch continues to well represent the history of our 1856 original mashbill.   

Bourbon Nerd Information: 

On 1/29/2025, a total of 70 barrels were dumped to produce only BiB with a barrel loss of 32.2% during aging.  A total of 8 distilling days were used in the batch from the Fall 2018 distilling season. The weighted average for the floor was 3.00 and there were 3 different ricks used as seen below.
