Over the summer, we began performing barrel picks with select accounts for the Holladay Soft Red Wheat. When doing this, I felt myself gravitating toward Floor 4 barrels as both my personal preference as well as the most balanced One Barrel Bourbon options. 

I honestly had no plans to do a single floor bottling. It was not that I was against the idea, but balance is always a word that I focus on and I’ve never felt that just a single floor was balanced when I go to tasting in the lab. This gave me enough confidence in the fourth floor that I knew I was ready to feature it exclusively in the August bottling.

August’s bottling of Soft Red Wheat was distilled in the spring of 2017. The 140 barrels used for this bottling experienced an average loss of 30% during the six years of maturing.


In addition to the Bottled-in-Bond bottling we created a Rickhouse Proof expression of Soft Red Wheat. The bottling still contained 100% of floor 4’s aged distillate from the six ricks used, which had been evenly split between the east and west sides of the rickhouse. By not diluting Soft Red, we have a 120 proof bourbon with an abundance of flavor.
