Kyle’s Notes:

In May, we bottled both Soft Red Wheat Bottled-in-Bond and Rickhouse Proof. The barrels were pulled from six out of seven floors in our rickhouse, making it the first time we have combined barrels from this many floors. The additional floors provided a variety of flavors to work with in the blending process. A total of 77 barrels were pulled from these floors, with the fourth floor contributing the most liquid.


The Bottled-in-Bond release from this month is great, but I must say that the Rickhouse Proof is my favorite bottling to date. Straight out of the barrels in its original form, the proof came out to be 119.9 once all the barrels were combined. Bourbon enjoyed at rickhouse proof enhances the sought-after flavors of the product. Soft Red Wheat, in particular, is plain magic at Rickhouse Proof, and I personally cannot get enough of this batch. Overall, May was an incredible month for us as we continue to experiment and refine our processes.
