Kyle’s Notes:
When working through this distilling season, I actually was at a crossroads with this bottling. I really thought about using less floor 4, but that would have impacted my release later in the year.
Why was that such a predicament for me? It seems like that is the tradeoff I am always facing with these bottlings, and often will plan several months based on my barrel availability. Well in this instance, so many of the barrels from this fourth floor were presenting with an almost anise-like nose, which is a bit of a deviation for us. I’m not exactly sure of the cause since the fifth floor barrels did not present that way, but I had to decide if I wanted to risk it with a full bottling.
Ultimately, I did decide to let floor 4 be the feature. This is the point of our transparency and variability. If I wanted to blend away that taste profile, I certainly could have but that wouldn’t be true to us and our authenticity. So if you notice a bit of a licorice (although subtle), know that it was a conscious decision to allow that.
Bourbon Nerd Information:
On 2/22/2024 a total of 124 barrels were dumped to produce both the BiB and a distillery only Rickhouse Proof with a barrel loss of 34.2% during aging. The Rickhouse Proof version was 122.7 proof. A total of 16 distilling days were used in the batch from the Spring 2017 distilling season. The weighted average for the floor was 4.32 and there were 6 different ricks used as seen below.
