Kyle’s Notes:

In the October Rickhouse bottling, I first introduced Rickhouse B, but this November BiB is the first bottling of ours in 40+ years that will be coming exclusively from that rickhouse. I briefly considered using only the 4th floor for this, but I did not want to only rely on one floor just yet (stay tuned) since the bourbon just turned 6 and I don’t want it to taste too one dimensional. 

As I say often – there is a lot to learn with the flavor profiles of each floor of this new rickhouse.  As barrels come of age for each mashbill, we will be testing and experimenting.  My fear has always been that it would taste dramatically different than C – and that currently does not seem to be the case. I very much think there is a small difference in taste (and proof variances from entry proof), but I think it is all a controllable change. These small changes are exactly what I was hoping for and provide opportunities for the fun projects.

Bourbon Nerd Information: 

On 11/12/2024 a total of 74 barrels were dumped to produce only BiB with a barrel loss of 34.7% during aging.  A total of 12 distilling days were used in the batch from the Fall 2018 distilling season. The weighted average for the floor was 4.16 and there were 7 different ricks used as seen below.
